Curried Sweet Potato Soup

FLAVORFUL CURRIED SWEET POTATO SOUP by Dr. Daryl Gioffre

Serves 4

INGREDIENTS
1 tbsp. coconut oil
1 1⁄2 inch piece of ginger, sliced and crushed
4 cloves garlic, minced
Zest and juice of one lime
2 tsp. curry
3 sweet potatoes, peel removed, and cut into 1 inch pieces 1 15 ounce can of full fat coconut milk (organic preferred – I use Native Forest)
2 cups filtered water
1⁄2 bunch cilantro, chopped

DIRECTIONS
Heat coconut oil in a large saucepan over medium heat.

Add ginger and garlic, lime zest and cook until slightly browned, about 3-4 minutes. Add curry and cook until fragrant – about 1 minute.

Add sweet potatoes, coconut milk and water. Bring to a boil, reduce to low and simmer, covered, for 25 minutes.

Turn off heat and leave on stove for 1⁄2 hour to allow flavors to meld.

Puree soup in blender or food processor. Garnish with chopped cilantro and lime juice.

Enjoy!

Slow Cooker Chicken Enchilada Soup

This soup is everything you like about chicken enchiladas, simplified in a bowl. It is an easy way to make a tasty, filling meal with just the right amount of heat. Using the slow cooker saves you time and energy in the kitchen, requiring little prep work for a lot of flavor.
Basically, you just add chicken to the bottom of the slow cooker and pile all of your favorite ingredients on top. Bell peppers, onions, and jalapenos all give this soup more substance. A few hours later, an amazing soup is ready to enjoy. I usually serve the soup with a bit of avocado to lend more creaminess to the dish as well.

I prefer to prepare a slow cooker meal in the morning and then have it ready when I come home for dinner. Or you can choose to throw everything together right before you go to bed and have the dish ready when you wake up in the morning. Which works especially well if you are packing up the food to take to work for lunch. Either way, cooking the chicken in a long and slow manner makes it completely tender and savory.

There are also two ways that you can prepare this soup as a freezer meal. One way is to prep the veggies – the onion, bell pepper, jalapeno, and garlic. Place them in a large resealable bag with the chicken, cumin, chili powder, oregano, and paprika. Place this in the freezer to store away for a rainy day. Then when you want to make it, simply defrost, place right into the slow cooker, and all you have to add is diced tomatoes, chicken broth, and salt and pepper to taste. This is great for people who like to plan ahead. The second way is to simply transfer the finished cooked soup to bags and freeze that instead. If you are cooking for one, freeze the leftovers so you can enjoy them later!

Ingredients
1 1/2 lbs. boneless skinless chicken breasts
1 medium yellow onion, diced
1 bell pepper, thinly sliced
1 jalapeno, diced
2 cloves garlic, minced
1 15-oz. can diced tomatoes
2 cups chicken stock
1 tbsp chili powder
1 tbsp cumin
1 tsp dried oregano
1/2 tsp paprika
Salt and freshly ground pepper, to taste
2 tbsp fresh cilantro, chopped
1 avocado, pitted and sliced
Instructions
Add the chicken to the bottom of the slow cooker. Add the onion, bell pepper, jalapeno, and garlic on top of the chicken. Pour the diced tomatoes and chicken stock over the top. Sprinkle with chili powder, cumin, oregano, paprika, salt, and pepper. Cover and cook on low heat for 8 hours. Use a fork to shred the chicken before serving. Garnish with cilantro and avocado.

Tell us about you…where were you born and how did you end up in Cary, NC?
I was born in Ohio, grew up in Mansfield, Ohio and went to OSU (I am a proud Buckeye!)-then, via Chicago, NYC, and Canterbury & London, England (where I went to graduate school, met my husband and had my oldest daughter), I came to settle in North Carolina in 2012. My parents moved here when I was in college so it was kind of my home away from home for many years. Now, five years and another daughter later we are settled here and loving it!

What originally brought you to studioVIBE?

I was looking for a studio that was close enough to both home and work that focused on Pilates/Barre/Yoga – studioVibe was the perfect fit, I am so glad I found it! I love the atmosphere, the classes and all the instructors and I also got to try something new I fell in love with-TRX!

Tell us a little about your water sports injury and when did it happen?

On September 13, 2016 I randomly decided while out on a friend’s boat to try wakeboarding…big mistake! We did not realize the boot bindings were not close enough together for me so I had trouble getting up and into position, then my lower left leg snapped from the pressure of the water! I was taken by ambulance to UNC where I had surgery and they inserted titanium plates and pins in from my knee down. I was in the hospital for a total of a week (the longest week ever!).

What classes are you taking and how have they helped with your rehab?

How soon after your injury did you come in?
After my surgery I was exactly three months non-weight bearing on my left leg. During this time, I did gentle mat exercises and Pilates at home, focusing solely on my core and arms. Then as soon as I could start standing on two feet again I got myself back in to the studio, first on the Tower and slowly worked my way up to Physique40. I had to go very slow but with persistence I quickly was coming in regularly again. I definitely credit my quick recovery to the fact I did Pilates on a regular basis before my injury! I am on a cane now, still recovering, but I am looking forward to getting back to TRX as soon as I can.

What is your favorite part about coming to our studio?

I feel so good when I leave! I honestly love every workout I have here…some people complain they hate working out and I say you must not be doing the right kind of work out or going to the right place then because I love all my workouts; my body always feels stronger and my mind feels clearer.

What would you tell someone who is feeling intimidated about coming to studioVIBE?

Everyone at studioVibe is so welcoming and accommodating, the instructors will help you find the right kind of workout to fit you. One of the best things about the studio is that you can find classes of all levels to attend. I love the Flexcard because it allows me to play around with classes and mix up the type of class and times that work for me and my schedule!

So tell us about you…tell us about your life outside of studioVIBE and what you do for fun?

I have a two daughters (a seven year old and a three year old) and an amazingly supportive husband, so the three of them take up most my free time. I work full-time at a private foundation in RTP that funds biomedical research and STEM education, and I am also very involved in the PTA at my daughter’s school. I also volunteer within our local community trying to be an advocate for community development and positive change.

Just for fun…What 3 things would you want if stuck on a deserted island?

A radio, a pillow and a blanket so I could have a long nap!

What was your favorite vacation?

I feel really lucky to have had so many amazing vacations but my favorite would probably be a toss-up between backpacking through SE Asia after I graduated from college, or staying at a beautiful resort in Belize with my husband, sister and brother in law.

If you had to pick three words to describe studioVIBE, what would those words be?

“Truly Life Changing”, Kim’s 3-words for how she would describe studioVIBE…and Kim that means so much to all of us!

Tell us about you…where were you born and how did you end up in Cary, NC?
My husband (Don) and I both grew up and went to school in the Northeast (Go ‘Cuse!). After years of battling baby snowsuits, poor economies and job markets we did what everyone in 1998 seemed to do…. packed up our young family and moved to Cary, NC! As the 50,000+ people that followed will attest, it was the best decision we have ever made. My parents followed almost immediately, my brother (just recently), and we hope to have my sister-in-law and her family here soon as well.

Word has it you have known Patty Geiger for a while…tell us more?
Patty and I have known each other for close to 20 years! Within weeks of moving, we joined the Cary YMCA and there was Patty! She has inspired the best in me from the start. Although, through circumstance, our paths have come together and apart over the years, she has always felt like a constant in my life. Her energy and light have always made me smile and helped me flourish. I am so proud to be a part of this incredible community she has conceived and built around herself.

So then what got you in to studioVIBE?
It’s a familiar story……… as my family aged, we become busier and I was more focused on raising my children (Tori – now 24 and Evan – now 21) than on my own growth. As I approached a milestone birthday and my nest emptied, I recommitted myself to getting in shape. I promised myself that after I reached my goal, my reward would be to join Studiovibe. Of course, I never felt I was ‘there yet’. Last Christmas (2015) my husband surprised me with the gift of Patty 🙂 and yoga and the encouragement to go ‘now’. It ended up being a life changing gift.

You have been coming regularly, what classes are you taking?
Originally, I began taking the yoga classes I had looked forward to joining but just several weeks in, Patty casually commented that my body had loved Pilates (I had taken some beginning mat classes with her years ago) so I signed up for a Pilates Primer class. Just over one year later, I am hooked; perhaps mildly addicted! I typically take 1-2 yoga classes, a mat Pilates class, an Intermediate Pilates Reformer class and have just begun a new Advanced Mat Pilates class every week.

What changes have you noticed since coming to the studio?
Everything! Have I mentioned the “Life Changing” part? I am amazed at not only the transformation my body has undergone but also my spirit: I am happier, more confident, my concentration has increased and I have so much energy.

What is your favorite part about coming to our studio?
Every morning I look forward to my time at the studio and my time with each instructor and my fellow clients. Every instructor has had the confidence in me that I may not always have in myself to push me to succeed more and more each day. I leave every session feeling accomplished, energized and excited to do it again tomorrow! It’s so much more than a work-out place, it is a true community that extends beyond the studio. I love the fact that I work out beside like-minded 20 year olds and 60 year olds every day, partake in a monthly book club at the Studio and attend the Holiday Market and participate in charitable causes each year.


What was your favorite vacation and why?
It’s hard to pick just one……. any vacation with my family is my favorite! We love the beach and we loveWhat would you tell someone who thinks they are too out of shape to do Pilates soccer fields. Both Tori and Evan played soccer growing up, hence we spent almost every weekend away at a soccer game. Evan currently plays for UNC Chapel Hill and Tori is on staff with UNC’s women’s team (she played for Davidson college as an undergrad) so soccer travel is still a large part of our life. When we’re not at a game, we will always pick the beach!

Any last minute thoughts for someone contemplating walking in our doors?
Don’t wait, as I did, for the perfect time …….. do it now, do it today. Wherever you are in your journey, it is the perfect time to add Studiovibe.  Just over one year ago in the Pilates Primer class I was certain I wouldn’t make it to the end but I was encouraged and pushed by the instructor and not only did I make it to the end, I came back, and back, and back. Several months later, I watched a Reformer class and thought, ‘wow— wouldn’t that be great!’. Again, I was encouraged to try. I was pushed and encouraged to success and not only did I do it, I am now working on advanced exercises on the Reformer! Conversely, I would tell the same to anyone already in terrific shape………. there is always more to discover in Pilates, always a little more to pull out and little more to work. It may seem a daily practice would become stale but the inspirational instructors at StudioVibe are exceptional in their knowledge and experience and are always able to make it more challenging (and more rewarding!).  I am so thankful for each and every one of them!!!

Kim Krause is a true “ray of sunshine” at our studio!  She is so hard-working and committed and super friendly to everyone.  We actually had a new client ask if she worked at the studio because she knew so many people’s names!  #GottaLoveKim
